Plant-based recipe development

I have collaborated on a number of plant-based recipe development (and other) projects with plant-based influencer Niki Webster at Rebel Recipes.

We make a tasty combo for food businesses; we put our chef’s hats on, and carve up the work, with me leading on research and strategy, and Niki on cooking and content creation.

For this project, the team at Unilever Europe asked us for trend-inspired plant-based recipe development to explore and optimise the use of Knorr Bouillons.

Our work was infused with inspiration from Unilever’s own European product and trend research, and their excellent 50 Future Foods report.

We identified a number of plant-based themes that are particularly relevant to younger home cooks, and cooked up dishes to bring each trend to life. The content supplied to the Knorr team was for product application inspiration and marketing.
